V60
For the V60 we recommend the following in this step-by-step guide:
- Filter: Use a Cafec Abaca Paper or Hario Tabbed filter.
- Grind: Set your Comandante C40 grinder to grind setting 26, which is ideal for a medium-fine grind.
- Water Temperature: Heat your water to 95°C.
- Coffee Dose: Use 12 grams of coffee for 200 grams of water.
Brewing Steps:
- Pre-wet the Filter: Rinse the filter with hot water to remove any paper taste and preheat your dripper and cup. Discard the rinse water.
- Bloom: Pour 40 grams of water over the coffee to saturate it evenly. Let it bloom for 30 seconds.
- First Pour: Pour water in a circular motion, aiming for 120 grams of water. This should be done at a rate of about 5 grams per second.
- Second Pour: Once you reach 120 grams, pour slowly and steadily in a circle, increasing the pour rate to about 10 grams per second, until you reach 200 grams of water.
- Brew Time: Your total brew time should be around 2 minutes.
